What are the chances of great skiing conditions over Thanksgiving? November 22- 28th. We are traveling to Innsbruck at that time and really want to ski the whole time.

I am sorry to tell you that no skiing will be found during your stay in Innsbruck.
Areas such as the Patscherkofel advertise - open December 16; The Nordkettenbahn on the 8th of December.
The Axamer Lizum may open a little earlier , but I would doubt it.
Even ski areas at higher altitudes without a glacier usually do not open until the very end of November or early December. Example Obertauern that plans to open this year on December 3.
Your only alternative is to go to one of the Glaciers in the area.
Probably the closest is the Stubai Glacier in Neustift toward the Brenner Pass south of Innsbruck.

The temperature today in many places in Austria will be upwards of 16grad celcius or 61 F. Even at 1800 meters todays temperature expected to be 10 grad C plus.
No cold temperatures in the weather prognosis.
